  • 1 cup roasted chestnuts, chopped
  • 4 cups day-old crusty bread (sourdough or ciabatta), cubed
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh sage, chopped
  • 2 cups low-sodium chicken broth (or vegetable broth)
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, heat olive oil. Sauté onions and celery until translucent (about 5 minutes). Add garlic and sauté for an additional minute.
  3. Toast the bread cubes on a baking sheet in the oven for around 10 minutes until golden brown.
  4. In a large bowl, mix toasted bread with sautéed vegetables, chopped chestnuts, herbs, salt, and pepper. Gradually stir in chicken broth until combined but not soggy.
  5. Transfer mixture to the prepared baking dish. Cover with foil and bake for 25 minutes; remove foil and bake for another 15 minutes until golden.
