- 1 cup roasted chestnuts, chopped
- 4 cups day-old crusty bread (sourdough or ciabatta), cubed
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 3 cloves garlic, minced
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh sage, chopped
- 2 cups low-sodium chicken broth (or vegetable broth)
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, heat olive oil. Sauté onions and celery until translucent (about 5 minutes). Add garlic and sauté for an additional minute.
- Toast the bread cubes on a baking sheet in the oven for around 10 minutes until golden brown.
- In a large bowl, mix toasted bread with sautéed vegetables, chopped chestnuts, herbs, salt, and pepper. Gradually stir in chicken broth until combined but not soggy.
- Transfer mixture to the prepared baking dish. Cover with foil and bake for 25 minutes; remove foil and bake for another 15 minutes until golden.
