- 1 lb boneless, skinless chicken thighs
- 4 garlic cloves, minced
- 1/2 cup Piri-Piri sauce
- 2 tbsp extra virgin olive oil
- 1 cup long-grain rice
- 2 cups water or chicken broth
- Juice of 1 lemon
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- In a bowl, mix garlic, Piri-Piri sauce, olive oil, and lemon juice. Add chicken thighs and marinate for at least 30 minutes.
- Rinse the rice under cold water until clear. In a saucepan, combine rinsed rice and water/chicken broth, bring to boil, then cover and reduce heat to low. Cook for about 15 minutes or until liquid is absorbed.
- Place marinated chicken in the prepared dish and bake for 25-30 minutes or until juices run clear.
