Ingredients
- 1 cup quick-cooking couscous
- 1 ½ cups water

- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil

Instructions

- While the couscous cooks, dice the tomatoes and cucumber, slice the red onion, and chop the mint.
