  • 1 lb ground meat (beef, turkey, or chicken)
  • 2 cups fresh spinach, finely chopped
  • 4 garlic cloves, minced
  • 1 cup breadcrumbs (plain or Italian seasoned)
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil (for sauce)
  • 15 oz canned crushed tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, combine the ground meat, chopped spinach, minced garlic, breadcrumbs, egg, Parmesan cheese, salt, and pepper. Mix until just combined.
  2. Form the mixture into small meatballs about one inch in diameter and place them on a parchment-lined baking sheet.
  3. Bake for 20-25 minutes until golden brown and cooked through.
  4. While baking, heat olive oil in a saucepan over medium heat. Add crushed tomatoes with salt and pepper; simmer for about 10 minutes.
  5. Once baked, add the meatballs to the sauce and let them simmer together for five minutes. Serve hot.
