  • 2 lbs beef chuck roast, cut into large cubes
  • 4 medium Yukon Gold potatoes, peeled and diced (about 2 lbs)
  • 3 large carrots, peeled and chopped (about 1 lb)
  • 1 large yellow onion, diced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and chopping potatoes and carrots into uniform pieces. Dice the onions finely.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef cubes in batches on all sides; remove from pot.
  3. In the same pot, sauté onions until translucent. Add potatoes and carrots; cook for about five minutes.
  4. Return the beef to the pot along with broth, thyme, bay leaves, salt, and pepper. Bring to a boil; reduce heat to low and cover. Simmer for at least two hours until tender.
  5. Remove bay leaves before serving and garnish with parsley if desired.
