  • 2 pounds beef chuck roast
  • 4 cups low-sodium beef broth
  • 1/4 cup low-sodium soy sauce
  • 2 tsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 cups fresh ramen noodles
  • 1/4 cup green onions, sliced (for garnish)

Instructions

  1. Trim excess fat from the beef chuck roast and season it with salt and pepper. Sear in a skillet over medium-high heat until browned on all sides (about 4-5 minutes). Transfer to a slow cooker.
  2. In a bowl, mix beef broth, soy sauce, ginger, garlic, and carrots. Pour over the seared beef in the slow cooker.
  3. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  4. About 30 minutes before serving, shred the beef using two forks and cook ramen noodles according to package instructions.
  5. Serve by dividing ramen into bowls and ladling broth and shredded beef over each portion. Garnish with sliced green onions.
