  • 4 cloves fresh garlic, minced
  • 8 oz favorite pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Season chicken breasts with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
  2. Cook pasta in boiling salted water according to package instructions until al dente. Drain and reserve some pasta water.
  3. In the same skillet, sauté minced garlic for about one minute. Add chicken broth and bring to a simmer. Stir in heavy cream and let cook down slightly before adding dried herbs.
  4. Return chicken to the skillet and simmer together for 5-10 minutes until cooked through.
  5. Toss cooked pasta with the sauce and grated Parmesan cheese. Add reserved pasta water as needed for desired consistency.
  6. Serve on plates, drizzled with extra sauce, and garnish with parsley or more Parmesan if desired.
