Ingredients

Scale
  • 1 pound ribeye steak
  • 4 cups fresh arugula
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, thinly sliced
  • 1/2 cup Gorgonzola cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season the ribeye steak with salt and pepper. Grill over medium-high heat for 4-5 minutes per side until desired doneness. Let rest for 5 minutes before slicing.
  2. 2. While the steak rests, wash and dry arugula, tomatoes, and cucumbers. Combine in a large bowl.
  3. 3. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
  4. 4. Thinly slice the rested steak against the grain and add it to the vegetables. Crumble Gorgonzola over the top.
  5. 5. Drizzle dressing over the salad just before serving and toss gently.
