  • 1 lb large shrimp, peeled and deveined
  • 8 small corn tortillas
  • 2 cups shredded green cabbage
  • 1 cup grated carrots
  • ½ cup mayonnaise
  • 2 tbsp freshly squeezed lime juice
  • ¼ cup chopped cilantro
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry. In a bowl, mix chili powder, garlic powder, salt, and pepper. Toss the shrimp in the seasoning until coated.
  2. Heat oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until pink and opaque. Remove from heat.
  3. In another bowl, combine cabbage, carrots, mayonnaise, lime juice, salt, and cilantro. Mix thoroughly.
