  • 2 lb beef chuck roast, cut into bite-sized pieces
  • 1.5 lb baby potatoes, whole
  • 6 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Cut the beef chuck roast into bite-sized pieces and season generously with salt and pepper.
  2. In a skillet over medium-high heat, melt 2 tablespoons of butter and sear half of the beef until browned on all sides. Transfer to the crockpot.
