Ingredients

Scale
  • 1 pound potato gnocchi
  • 4 ounces thick-cut bacon, chopped
  • 1 cup freshly grated Parmesan cheese
  • 2 large eggs, room temperature
  • 1/2 cup heavy cream
  • Freshly cracked black pepper, to taste
  • Sea salt or kosher salt, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float (about 2-3 minutes). Drain and set aside.
  2. In a skillet over medium heat, cook the chopped bacon until crispy (5-7 minutes). Drain excess fat but leave some for flavor.
  3. In a bowl, whisk together eggs and heavy cream until smooth. Stir in grated Parmesan and black pepper.
  4. Return cooked gnocchi to the skillet with bacon. Off heat, quickly pour egg mixture over gnocchi while stirring gently to coat without scrambling eggs.
  5. Serve immediately with extra Parmesan and black pepper on top.
