Ingredients
Scale
- 4 flour tortillas (8-inch)
- 2 cups fresh spinach (packed)
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1 medium red onion (thinly sliced)
- 2 tablespoons olive oil (divided)
Instructions
- Prepare the Filling: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the sliced red onion until translucent. Add the spinach and cook until wilted. Remove from heat and mix in the feta and mozzarella cheeses.
- Assemble the Quesadilla: Place one tortilla on a clean surface. Spoon some filling onto half of the tortilla, then fold the other half over to cover.
- Cook the Quesadilla: Heat the remaining tablespoon of olive oil in a nonstick skillet over medium heat. Cook each folded quesadilla for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until crispy.
- Cut and Serve: Let the cooked quesadillas rest for a minute before slicing into triangles. Serve warm with salsa or guacamole.
