Ingredients

Scale
  • 1 lb lean ground beef (90% lean or higher)
  • 1 cup brown rice
  • 1 cup shredded sharp cheddar cheese
  • 2 cups chopped romaine lettuce
  • 1 cup diced tomatoes (fresh or cherry)
  • ½ cup sliced dill pickles
  • ¼ cup no-sugar-added ketchup
  • 2 tbsp yellow mustard

Instructions

  1. Prepare the brown rice: Rinse 1 cup of brown rice until clear. Combine with 2 cups water in a saucepan, bring to a boil, then cover and simmer on low for about 45 minutes.
  2. Cook the ground beef: In a skillet over medium heat, brown 1 lb of ground beef, breaking it apart as it cooks. Drain excess fat and season with salt and pepper.
  3. Assemble the bowls: Place half a cup of cooked brown rice in each bowl, followed by an even portion of cooked ground beef.
  4. Add toppings: Layer shredded lettuce, diced tomatoes, and sliced pickles on top of the beef.
  5. Drizzle with sauce: Mix ketchup and mustard in a small bowl and drizzle over each assembled bowl.
