Ingredients
- 4 medium sweet potatoes (about 1.5 lbs)
- 3 boneless skinless chicken breasts (about 1.5 lbs)
- 1 cup BBQ sauce (your choice)
- 1 cup shredded cheddar cheese
- 2 green onions (sliced thinly)
- 2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash and scrub sweet potatoes; pierce several times with a fork. Bake on a parchment-lined sheet for 45-60 minutes until tender.
- While the potatoes bake, season chicken breasts with garlic powder, salt, and pepper. Cook in a skillet over medium heat for about 6-7 minutes per side until cooked through. Shred the cooked chicken using two forks.
- Mix shredded chicken with BBQ sauce in a bowl until evenly coated.
- Once sweet potatoes are cooked, slice them open lengthwise without cutting all the way through. Fill each potato with the BBQ chicken mixture and top with shredded cheese.
- Return to the oven for another 10 minutes until cheese is melted and bubbly. Serve warm, garnished with sliced green onions.
