  • 8 oz rotini pasta
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 bell pepper, diced

Instructions

  1. In a large pot over medium heat, brown the ground beef for about 5-7 minutes until fully cooked; break it apart with a spoon.
  2. Add the diced bell pepper and cook for another 3-4 minutes until softened.
  3. Stir in the taco seasoning, mixing well to coat the meat and veggies.
  4. Pour in the rotini pasta and enough water (or broth) to cover by an inch. Bring to a boil, then reduce heat and simmer for 10-12 minutes until al dente.
  5. Stir in the heavy cream and salsa; simmer for an additional minute.
  6. Remove from heat and mix in the shredded cheese until melted. Serve garnished with fresh cilantro and a dollop of sour cream.
